SUMMARY:"Sampling for Success"
DESCRIPTION: “Sampling for Success” Go from passive taster to active winemaker during the critical weeks leading up to harvest. This program demonstrates how field sampling\, sugar accumulation tracking\, and sensory evaluation dictate the exact day a vineyard is picked. \nThis TASTE (Terrior\, Artisanal\, Small\, Trusted\, Engagement) experience showcases the fine line between scientific precision and artistic intuition. \nIn the Rows  \nStarting in designated estate blocks equipped with sampling bags and data sheets to collect a statistically representative field sample. \n\nThe Randomization Challenge: Focusing on why picking the closest\, most beautiful grape ruins data accuracy. We will walk a grid pattern\, alternating sides of the row and selecting clusters from different canopy heights (top\, middle\, and shaded interior).\nThe Representative Berry Count: Sampling individual berries from the top\, shoulder\, and tip of a single cluster. Highlighting that berries exposed to afternoon sun ripen differently than those facing north or buried behind leaves.\nThe Composite Sample:  Combining the collected berries into a single bag\, gently crushing them by hand to create a homogeneous juice blend for testing.\n\nThe Field Lab \nIn this step we will transform raw field data into actionable winemaking metrics. \n\nRefractometer Calibration: Using both optical and digital refractometers we will calibrate the instruments using distilled water\, showing how to read the Brix scale (sugar concentration).\nThe Brix Reading: By placing drops of fresh juice onto the prism\, we will record the sugar levels\, learning that a single degree change in Brix can shift a wine’s final potential alcohol level by roughly 0.5–0.6%.\nThe Acid & pH Factor: A brief demonstration on sugar data is balanced against pH and titratable acidity (TA).  While sugar acts as the engine for fermentation\, natural acidity provides the wine’s lifespan and freshness.\n\nSensory Analysis \nThis experience culminates in a sensory workshop that pairs physical berry chewing with finished wines from the exact same blocks. \n\nThe Berry Breakdown Test: We taste through the sequential steps of analytical grape tasting:\n\nThe Skin: Chew the skins to evaluate tannin bitterness\, color extraction potential\, and how easily the skin breaks down.\nThe Pulp: Assess the texture\, sweetness versus tartness\, and how easily the pulp separates from the seed.\nThe Seeds: Examine the color of the seeds. Green seeds mean astringent\, bitter tannins; brown\, crunchy seeds mean phenolic ripeness.\n\n\nFinished Wine Calibration: Tasting through a flight of previous vintages from exact blocks we’ve run analysis on.  Seeing the raw flavors you’ve just tasted in the vineyard—such as crunchy acidity or specific fruit aromatics—to the fully developed structures in the glass.\n\nSeptember 5th\, 2026 \n12PM-3PM \n$75 Includes vineyard picking decisions\, sensory analysis\, flight of finished wines from blocks  \nwe sampled. \n  \nhttps://www.exploretock.com/schaadcellars/event/613140/sampling-for-success

His love of antiques doesn’t stop at tractors… he also collects antique slot machines. \nThen we shift from steel to stemware as we debut our newly released 2023 Cabernet Franc. Known for its elegance\, aromatics\, and food-friendly structure\, Cab Franc is a winemaker’s darling\, and we’re thrilled to share this new vintage with you for the very first time\, right where the grapes were grown. \nThis event blends history\, wine\, and vineyard life into an unforgettable Napa Valley experience: relaxed\, authentic\, and rooted in the land. \nSATURDAY\, SEPTEMBER 12\, 2026\, 11 AM – 1 PM at the Elkhorn Peak Cellars Estate Vineyard: 200 Polson Rd. SUMMARY:"The Vigneron for a Day"
DESCRIPTION:“The Vigneron for a Day” The flagship vineyard and cellar experience places you directly into the high-stakes world of a winemaker during the peak of harvest. This program transitions folks from the field to the crush pad\, giving them raw\, tactile access to every step of production from vine to tank. \nThis intensive experience commands premium attention to detail and is a high-touch\, small-group masterclass. \nEarly bird gets the grape \nWe begin in the morning when ambient temperatures are low\, protecting the fruits chemistry and keeping the grapes crisp. \n\nWine starts in the Vineyard: Equipped with harvest shears and picking buckets we will hand harvest fruit for fermentation.  Guiding you on field-sorting protocol: clipping only clean\, ripe clusters while dropping sunburned\, dehydrated\, or mold-affected fruit directly onto the ground.\nMany Hands Make Light Work:  Working as a group to fill a traditional 1/2-ton macro-bin. This provides a physical understanding of the immense labor and rapid pacing required to clear a vineyard block before the afternoon heat sets in.\n\nCrush Pad Precision \nMoving the harvested fruit across the estate for destemming\, to experience the final line of quality control before fermentation. \n\nMOG Patrol: Working as a group along a vibrating sorting table we will be removing “Material Other than Grapes” (MOG)\, including stems\, leaves\, and under ripe/over ripe fruit.\nDestemming versus Crushing:  Here we evaluate how the destemmer separates berries from the rachis.  Inspecting the output to evaluate the balance of whole berries versus crushed fruit entering the fermentation vessel.\n\nWine Is Magic \nTransition into the fermentation cellar to manage active\, bubbling fermentations using two primary methods of cap management. \n\n Punchdowns:\n\nHomogenizing the fermenter after crushing and while initially fermenting is critical to fermentation kinetics.  \nUsing a stainless steel punchdown tool we will use our body weight to drive the floating “cap” of grape skins back down into the fermenting juice\, releasing trapped carbon dioxide and extracting color and tannin. \n\nPumpovers:\n\nWe will start by setting up a cellar pump\, this helps with aerating the fermenting must giving the yeast needed Oxygen\, cooling and equilibrating the must. \nConnecting the input on the pump to the screen\, and the output to a hose so we can spread the fermenting juice over the top of the tank. Spraying it evenly across the cap to aerate the yeast while gently extracting soft tannins and flavor.  This gives the fermenting wine a chance to breathe while creating silky mouthfeel and not extracting harsh tannins from the mechanical punchdowns. \nGiven the high labor intensity\, cellar safety risks\, and operational disruption during active harvest\, this experience is priced as an elite\, seasonal offering. \n  \nSeptember 19th\, 2026 \n9AM-4PM  \n$100 per person includes Lunch\, complimentary tour and tasting of estate wines. \nhttps://www.exploretock.com/schaadcellars/event/613143/vigneron-for-the-day

SUMMARY:Grape Stomp in the Vineyard
DESCRIPTION:Step into Napa Valley’s harvest traditions with an interactive vineyard experience designed to celebrate the art and culture of grape growing. Guests will start with a guided walk through the vines to observe and learn about the seasonal rhythms of the vineyard\, as told by the farmers themselves. The experience continues with a hands-on (or should we say feet!) activity that connects participants with the shared artistic experience of the centuries-old tradition of grape stomping. You’ll stomp grape clusters barefoot in a barrel (only ankle deep)\, and will have water provided to wash up afterwards. If you prefer to bring water shoes or boots\, you’re invited to do so. \nThis event combines education\, tradition\, and creative participation\, honoring the agricultural heritage of Napa Valley. \nNo experience necessary. \nTicket includes an immersive vineyard tour and grape stomp\, two glasses of wine\, and a personal charcuterie plate to enjoy as you work\, taste\, and learn.
